High sugar wines are easy now, just grab some Eigam Bronze vine cuttings and use them.
High tannin wines are still more of an art, use Tedras Tannin and let it age to 13%, that'll give you 90% of the possible tannin. To get 100% you need to go above 14%, so if you have the time, let it age some more. Max tannin is Color * Skin / 100. If that number is below 150, throw out the grapes or use it for drinking.

1 Marble (see below) = 250 fire spirits 2 charcoal = 1 fire spirits of fish, mineral, vegetable, grain, worm 12 charcoal = 5 fire sprits of grass 4 charcoal = 1 fire spirit of wood ask for other materials
